Venison ragù is a perfect condiment for game lovers. It is prepared according to the traditional recipe, starting with sautéed vegetables and blending the meat with good red wine, then continuing to cook over low heat for several hours in order to keep the meat soft and to absorb all the aromas of the spices.

The ideal combination is with a short pasta format, or to complete a risotto or on a soft polenta.
