Monocultivar

Extra virgin olive oil made with olives of a single variety (cultivar) is called monovarietal or monocultivar. The monocultivar is a precious oil, an oil that typically represents the area where the olives were grown and capable of giving its own aromatic and organoleptic characteristics to each dish.
