Tomatoes are harvested only when they have reached full ripeness, then slowly arranged in the sun on wooden racks, following an ancient practice handed down through families in Cilento. No forced drying, no oven: only the warmth of the sun and the necessary time for the tomato to lose water, concentrate its natural sweetness, and develop an intense and authentic aroma.
It is a slow process, made with patience and attention, but this is precisely what gives the tomato a full, genuine taste, recognizable from the first bite.
Preserved in extra virgin olive oil
Once dried, the tomatoes are preserved whole in extra virgin olive oil, along with a few selected ingredients: capers, garlic, and a pinch of salt. Nothing superfluous.
The oil not only preserves them: it envelops them, protects their consistency and aroma, and, over time, enriches itself with their flavors, becoming a tasty condiment to use on bruschetta, pasta, vegetables, and traditional dishes.
Only essential ingredients
Our recipe is made of simplicity: few ingredients, all recognizable. No preservatives, no colorings, no artificial flavors. Inside the jar you will find exactly what you read on the label: tomatoes, extra virgin olive oil, capers, garlic, and salt.
The same raw material used for our Sun-Dried Tomato Paté, but here the tomato remains whole, full-bodied and ready to enjoy as is.
How to serve them
Perfect for enriching an appetizer alongside cured meats and aged cheeses, sun-dried tomatoes in oil are also suitable for many preparations in the kitchen: from pasta to risottos, from focaccias to bruschetta, as well as accompanying meats, grilled vegetables, and Mediterranean-flavored salads.
A versatile jar, always to have in the pantry to give character and authenticity even to the simplest dishes.
